Tomato, Basil & Yellow Peach Salad
serves 4
INGREDIENTS
3-4 ripe truss tomatoes, quartered
6-8 cherry tomatoes, halved
2-3 ripe yellow peaches, cut into segments
generous handful of fresh basil leaves
8-10 tsp ATT Fresh Almond Curd
Extra Virgin Olive Oil
Apple Cider Vinegar
Generous sprinkle of ATT Green Gomasio
METHOD
Assemble the salad by layering the tomatoes and peaches on a platter. Add the basil leaves and spoonfuls of Almond Curd. Dress with olive oil and apple cider vinegar, and finally sprinkle with Green Gomasio to season
