This is for all those times you feel like pancakes but don’t want to load up on sugar or white flour! I think of them as porridge pancakes. And I love porridge.
Makes 8 small hotcakes
Ingredients:
100ml plant based milk
200g rolled oats
1 banana (use 2 if they’re small!)
Method:
Put all ingredients into a blender and blitz until you have a consistent paste. If you’d like your oatcakes a little lighter, just add more milk.
For each hotcake, spread 1/4 cup mixture onto a preheated grill and cook for 2 minutes before flipping with a spatula and cooking on the other side.
Top with maple syrup, blueberries, coconut – whatever takes your fancy.
